In general…

I am a proud owner of a tiny kitchen equipped with just a few kitchen aids and a spatula. I have no professional training in baking, but I tend to companesate by reading about it and practising in the kitchen daily…

Personally…

I will be honest enough to admit that I am impatient, frowsy, disorganized and very very clumsy. But somehow all of those things turn around when I get to baking. I turn into a meticulous person with endless patience when it comes to shaping the cookies or baking a five-layered cake. Or comparing hundreds of similar recipes for choux pastry… or homemade puff pastry… or lemon curd… I am sorry, are you still with me? Obviously, I get lost in a vast culinary world. But if you are anything like me, you will know the joy a well baked quiche can bring you.

What can you expect to see on Time for baking?

At first, I wanted to collect all of my favourite childhood cake recipes of which some might be unfamiliar to many of you because I live in Middle Europe and, as every other culture, we have our own favourites and classics. But then I got interested in other recipes – I wanted to try cinnamon rolls, and German cake and croissants and Tres Leches… My interests expand as I bake and everyday I learn something new. I learn how to substitute or modify recipes to my liking, I experiment and improvise hoping that my labor would turn into something delicious. And when it does, I can’t wait to share it with someone.

Sharing…

…brings me to my final chapter of introduction. Since I live with the one person that dislikes eating desserts, I had to choose between getting incredibly fat from eating all the cake myself (tried it, didn’t quite work for me, though) or making smaller portions of it to satisfy my sweet tooth without having to buy new wardrobe. I chose the latter. It was the same person that bought me my ø 16 baking pan, which I wanted sooo much (to be able to carry out option two). It was such a nice gesture and perhaps my biggest nudge to start this blog. Because it was a special way of saying she believed in me… Or perhaps a plea to stop harassing her with my baking and bake for myself only. Therefore, you will find many mini quiches and mini cakes on this website – they are my-size portion.

But I think that would be enough about me. It’s time for baking, so let’s get to business!
